    Prepare onions

    Peel the onions and slice them into rings about 1/4 inch thick. Separate the rings and pat dry with paper towels.

    Set up three stations: a dry batter bowl, a wet batter bowl, and a plate of breadcrumbs. Have a wire rack or plate ready for draining.

Make batters

    Dry batter

    In a large bowl, whisk together flour, cornstarch, baking powder, salt, paprika, garlic powder, onion powder, and black pepper until well combined.

    In another bowl, whisk eggs with milk and cold beer until smooth.

Coating onions

    Dry coat

    Dip each onion ring into the wet batter, letting excess drip off, then dredge in the dry batter until evenly coated.

    Breadcrumb coat

    Dip the battered rings back into the wet batter briefly, then roll in breadcrumbs (and Parmesan if using) until fully coated.

Frying

    Heat oil

    Pour vegetable oil into a heavy pot or Dutch oven to a depth of about 2 inches. Heat to 350°F (175°C).

    Fry onion rings in batches for 2–3 minutes per side, or until golden brown and crisp. Do not overcrowd the pot.

    Remove rings with a slotted spoon and drain on a paper towel–lined plate. Lightly salt while hot if desired.
