Prepare hubcap sauce
In a small bowl, whisk together mayonnaise, ketchup, and yellow mustard until smooth. Set aside.

Toast buns
Split the brioche buns and lightly toast the cut sides in a dry skillet over medium heat until golden and fragrant, about 1–2 minutes.

Season beef and form patties
In a bowl, gently combine ground beef with Worcestershire sauce, salt, and pepper. Divide into two equal discs about 3/4 inch thick and slightly wider than the buns; press a shallow dent in the center of each patty to prevent puffing.

Cook patties
Heat vegetable oil in a heavy skillet over medium-high heat. Cook the patties 3–4 minutes per side for medium, flipping only once. In the last minute, lay a cheese slice on each patty to melt.

Assemble hubcap
Spread hubcap sauce on the bottom buns. Layer lettuce, tomato, and pickle on each bottom bun. Place the cheesy patties on top, then pile on caramelized onions. Cap with the top buns.

Serve immediately with sides of fries or chips. Optionally add extra pickle slices.
