Fried Pork Chops with Sides

    Season the Pork

    Pat the pork chops dry with paper towels; season on both sides with salt, black pepper, paprika, and garlic powder.

    Set up Dredge Station

    In a shallow dish, whisk eggs with milk. In another dish, whisk together flour with a pinch of salt, pepper, paprika, and garlic powder.

    Dredge the Chops

    Dip each chop into the egg wash, then coat in the flour mixture, pressing to adhere. Place on a rack while coating remaining chops.

    Heat the Oil

    Pour oil into a large skillet to about 1/2 inch depth and heat over medium-high heat until shimmering (around 350-365°F / 175-185°C).

    Fry the Chops

    Carefully add chops in batches to hot oil. Fry until deep golden brown and crust is crisp, about 4-6 minutes per side. Check internal temperature reaches 145°F (63°C). Remove to a wire rack to drain.

    While chops fry, peel and cut potatoes; simmer in salted water until tender (about 15-20 minutes). Drain, then mash with butter and milk; season with salt and pepper.
