Method

Dough

  1. 1

Whisk together the all-purpose flour, granulated sugar, and salt in a large bowl.

  2. 2

In a separate bowl, whisk together the egg, warm water, and melted butter until well combined.

  3. 3

Pour the wet mixture into the dry ingredients and stir with a fork or spatula until a shaggy dough forms.

  4. 4

Turn the dough onto a lightly floured surface and knead briefly until smooth, about 2–4 minutes.

  5. 5

Wrap the dough and refrigerate for 20–30 minutes to rest and relax the gluten.

Apple filling

  1. 6

In a saucepan, combine the diced apples, brown sugar, cinnamon, lemon juice, and cornstarch.

  2. 7

Cook over medium heat, stirring occasionally, until the apples are tender and the mixture thickens to a filling's consistency, about 6–8 minutes.

  3. 8

Remove from heat and let the filling cool slightly before using.

Peach filling

  1. 9

In a saucepan, combine the diced peaches, granulated sugar, lemon juice, cinnamon, and cornstarch.

  2. 10

Cook over medium heat, stirring, until the mixture thickens and the peaches are glossy, about 4–6 minutes.

  3. 11

Remove from heat and let the filling cool slightly before using.

Chocolate filling

  1. 12

In a small saucepan over low heat, melt the chocolate chips with the heavy cream, stirring until smooth.

  2. 13

Stir in the sugar and vanilla extract until glossy. Remove from heat and allow to cool slightly before using.

Assemble and fry

  1. 14

Roll the rested dough on a lightly floured surface to about 1/8 inch thickness. Cut into rounds roughly 3–4 inches in diameter.

  2. 15

Place about 1 tablespoon of filling onto the center of each round. You can fill with apple, peach, or chocolate filling as desired.

  3. 16

Fold the dough over the filling to form a half-moon, moisten the edges with water, and press to seal. Crimp edges with a fork for a tight seal.

  4. 17

Heat oil in a deep skillet or fryer to 350°F (175°C). Fry pies in batches until golden brown, about 2–3 minutes per side.

  5. 18

Drain on paper towels and sprinkle with powdered sugar if desired. Serve warm.
