Dill Pickles

Wet Batter

Method

Prep and Station Setup

  1. 1

Pat dill pickle spears dry with paper towels to remove excess moisture and help the coating adhere.

Dry Mix

  1. 2

In a large shallow dish, whisk together flour, cornmeal, paprika, garlic powder, onion powder, cayenne pepper, black pepper, and salt until evenly combined.

Wet Batter

  1. 3

In a separate bowl, whisk eggs with milk. If desired, add beer or sparkling water to lighten the batter and whisk until smooth.

Coating

  1. 4

Dip each pickle spear into the wet batter, allowing excess to drip off.

  2. 5

Roll the battered spears in the dry mix, pressing gently to coat completely. Shake off any excess coating.

Frying

  1. 6

Heat oil in a deep skillet or Dutch oven to 350°F (175°C). Keep the temperature steady between batches.

  2. 7

Fry the coated pickles in batches for 2–3 minutes per side, until golden brown and crisp.

  3. 8

Use a slotted spoon to transfer to a paper towel-lined plate to drain. Serve immediately with dipping sauce.
