    Prepare jalapeño peppers: rinse and pat dry; slice lengthwise in half and remove seeds and membranes for milder heat, keeping the stems intact for easy dipping.

    Make wet batter: in a medium bowl whisk together the egg and cold water until well combined.

    Make dry coating: in a separate wide bowl or plate, whisk together flour, cornstarch, baking powder, salt, and black pepper until evenly dispersed.

    Heat the oil: pour vegetable oil into a deep skillet or pot to a depth of about 2 inches and heat to 350°F (175°C). Have a wire rack or paper towels ready for draining.

Dredge and Coat
