Method

Preparation and Marinade

    Prepare and slice

    Wash and pat dry the green tomatoes. Slice into 1/4-inch thick rounds.

    Season slices

    Lightly sprinkle both sides of the tomato slices with salt (0.5 tsp) and black pepper (0.25 tsp). Let rest 5 minutes to draw out moisture.

    Make wet and dry mixtures

    In a shallow bowl, whisk together the eggs (2) and buttermilk (1 cup) until well combined. In another shallow bowl, mix all-purpose flour (1 cup), cornmeal (0.5 cup), paprika (1 tsp), garlic powder (0.5 tsp), onion powder (0.5 tsp), salt (1 tsp), black pepper (0.5 tsp), and cayenne (0.25 tsp).

Coating

    Dip and coat

    Dip each tomato slice into the wet mixture, allowing excess to drip off, then dredge in the dry coating, pressing to adhere evenly. Ensure each slice is well coated with the dry mixture.

Frying

    Heat oil

    In a skillet or cast-iron pan, heat the neutral oil to 350°F (175°C).

    Working in batches, fry the coated tomato slices 2–3 minutes per side, until golden brown and crisp. Do not overcrowd the pan.
