Prepare dredge and wet dip
Pat dry catfish fillets. In a shallow dish, whisk together the flour, cornmeal, paprika, garlic powder, onion powder, salt (dredge), and black pepper to create the seasoned dredge.

Wet dip for catfish
In a separate bowl, whisk together buttermilk and the egg until well combined.

Dip and coat
Dip each catfish fillet in the wet mixture, allowing excess to drip off, then dredge in the seasoned flour-cornmeal mixture until evenly coated.

Heat oil
In a heavy-bottomed pot or deep skillet, pour vegetable oil to a depth of about 2 inches and heat to 350-360°F (175-185°C).

Fry catfish
Working in batches, fry the coated catfish fillets 4-6 minutes per side until golden brown and the internal temperature reaches 145°F (63°C). Remove to a paper-towel-lined rack to drain.

Prepare fries
Preheat oven to 425°F (220°C). Cut potatoes into even sticks, pat dry, toss with 2 tablespoons oil and 1 teaspoon salt, and spread on a baking sheet. Bake 25-30 minutes, turning once, until crisp and golden.

Shred the green cabbage and carrot. In a bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt (slaw), and pepper. Toss with cabbage and carrot until coated. Refrigerate until serving.
