    Rinse the Russet potatoes well. Peel if desired, then cut into even batons about 1/4 to 1/2 inch thick.

    Place cut potatoes in a large bowl and cover with 4 cups of cold water. Let soak for 30 to 60 minutes to remove excess starch.

    Drain potatoes and dry thoroughly with clean kitchen towels or paper towels. The drier they are, the crisper they will become.

    Toss the dried potato batons with 2 tablespoons cornstarch to lightly coat; shake off any excess.

    Pour oil into a heavy pot or Dutch oven and heat to 325°F (165°C). Maintain a steady temperature.

    Working in batches, blanch the potatoes in hot oil until pale and flexible, about 4–6 minutes per batch. Do not brown. Remove with a slotted spoon and drain on a rack.

    Increase the oil temperature to 375°F (190°C) for the final fry.

    Return potatoes to oil and fry in batches until deeply golden and crisp, about 2–4 minutes per batch. Remove and drain well.

    Season the hot fries immediately with 2 teaspoons fine sea salt and 1 teaspoon garlic powder. Toss to coat evenly.
