Heat oil
Pour vegetable oil into a large deep pot or fryer to a depth of at least 3 inches. Heat to 350°F (175°C).

Wash and cut russet potatoes into evenly sized batons. Soak in cold water for 15 minutes to remove excess starch, then drain and pat completely dry.

Working in batches, fry the potato batons at 325°F (165°C) until pale and flexible, about 4–5 minutes. Remove with a slotted spoon and drain on paper towels.

Increase oil to 375°F (190°C). Fry the potatoes again until crisp and golden. Drain on paper towels and season with salt to taste.

Make slaw
Shred green cabbage and carrots. Whisk together mayonnaise, apple cider vinegar, sugar, lemon juice, salt, and pepper. Toss with cabbage and carrot; refrigerate until ready to serve.

Marinate catfish
Rinse catfish fillets and pat dry. Dip in buttermilk, then lightly season with salt and black pepper.

In a shallow dish, combine cornmeal, all-purpose flour, paprika, garlic powder, onion powder, cayenne, salt, and black pepper.

Remove catfish from buttermilk and coat thoroughly in the dredge mixture, pressing to ensure a crust forms.

Fry catfish
Carefully lower the dredged catfish into the hot oil. Fry 3–4 minutes per side, until golden and cooked through. Drain on paper towels.

Make fritter batter
In a bowl, whisk together cornmeal, flour, baking powder, and salt. In a separate bowl, beat eggs with buttermilk, then fold into the dry ingredients. Stir in green onions and corn kernels.

Drop spoonfuls of batter into the hot oil and fry until golden brown on both sides. Drain on paper towels.

Drop spoonfuls of batter into hot oil and fry until puffed and golden. Drain on paper towels.
