    Preheat the oil for frying to 350-360°F (175-180°C). Line a rack or plate with paper towels for draining fried items.

    Trim and pat dry catfish; have slaw dressing mixed and cabbage/carrot ready; batter components for fritters and pups prepared.

Catfish prep and fry

    Dredge prep

    Pat catfish fillets dry. In a bowl, whisk together flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and black pepper.

    Dredge fish

    Dip each fillet in buttermilk, allow excess to drip, then coat in the seasoned flour mixture. Press gently to ensure adhesion.

    Fry catfish

    Heat oil in a heavy pot to 350-360°F. Fry the fillets in batches 3-5 minutes per side until golden and crisp. Remove to rack and season lightly with salt.

Fries prep and fry

    Prepare potatoes

    Wash, peel (optional), and cut potatoes into even sticks. Rinse to remove excess starch and pat completely dry.

    Heat oil to 325-350°F. Fry potatoes in batches for 3-5 minutes until pale and almost tender; remove to drain.

    Second fry & finish

    Increase oil temperature to 375-400°F. Return potatoes to the oil in batches and fry until crisp and golden. Drain on rack and sprinkle with salt.

Coleslaw

    In a bowl, whisk mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.

    Toss shredded cabbage and carrot with the dressing until evenly coated. Chill at least 15 minutes before serving.

Corn Fritters

    In a bowl, whisk together flour, baking powder, and salt. Stir in corn kernels, then beat in egg and milk until a thick batter forms.

    Heat a thin layer of oil in a skillet over medium heat. Drop batter by heaping tablespoons and flatten slightly. Fry 2-3 minutes per side until golden. Drain on paper towels.

    Heat oil to 350-360°F. Drop batter by spoonful into hot oil and fry until puffed and golden, about 3-4 minutes. Drain on rack.

Plating and serving
