Make the cola glaze

    Combine glaze ingredients

    In a small saucepan over medium heat, whisk together Coca-Cola, ketchup, soy sauce, and brown sugar.

    Add aromatics

    Add minced garlic and grated ginger; bring to a simmer.

    Reduce to glaze

    Let simmer 6-8 minutes, stirring occasionally, until the sauce thickens to a glaze-like consistency. Remove from heat.

Prepare chicken

    Season chicken

    Pat chicken thighs dry with paper towels. Rub with olive oil, then season with salt and pepper on all sides.

Brown the chicken

    Brown in skillet

    In a large oven-safe skillet, heat a light coating of oil over medium-high heat.

    Sear chicken

    Sear chicken, skin-side down, 3-4 minutes until golden and crisp. Flip and sear 2 minutes on the other side.

Bake and glaze

    Brush glaze

    Preheat oven to 400°F (200°C). Brush chicken with a generous layer of cola glaze.

    Bake and baste

    Transfer the skillet to the oven and bake 20-25 minutes, uncovered, brushing with additional glaze halfway through.

    If the glaze needs thickening, simmer remaining glaze for a couple of minutes to serve as extra sauce.

    Check internal temperature; chicken should reach 165°F (74°C). Remove from oven.
