Method

Preparation

  1. 1

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease.

  2. 2

Cut the chicken breasts into evenly sized tenders, about 3–4 inches long and 0.5–0.75 inches thick.

Dredging Station

  1. 3

In a shallow bowl, whisk the eggs and milk together until smooth.

  2. 4

In a second shallow dish, combine breadcrumbs, grated Parmesan cheese, paprika, garlic powder, onion powder, salt, and pepper.

Coating

  1. 5

Dip each chicken tender into the egg mixture, allowing excess to drip back into the bowl.

  2. 6

Coat the egg-covered chicken in the breadcrumb-Parmesan mixture, pressing gently to ensure an even layer on all sides.

Baking

  1. 7

Place coated tenders on the prepared baking sheet in a single layer.

  2. 8

Lightly spray or drizzle the tenders with a little oil to help crisp the coating.

  3. 9

Bake for 12–15 minutes, then flip and bake an additional 3–5 minutes, until the internal temperature reaches 165°F (74°C) and the coating is golden.
