    Pound beef cube steaks to 1/4 inch thickness between plastic wrap. Trim edges if needed to ensure uniform thickness for even cooking.

    Make dredge and seasoning

    In a shallow dish, whisk together 2 cups all-purpose flour, 1.5 tsp salt (for dredging), 1 tsp black pepper, 1 tsp paprika, 0.5 tsp garlic powder, 0.5 tsp onion powder, and 0.25 tsp cayenne (if using) to create the seasoned flour.

    Prepare egg bath

    In a separate bowl, beat 2 eggs with 1 cup buttermilk until well combined.

    Dredge steaks

    Dip each steak into the egg bath, allowing excess to drip off, then coat thoroughly in the seasoned flour. Place coated steaks on a rack and let rest 10 minutes to help the crust set.
