    Season the chicken with salt and pepper.

    In a large pot, heat olive oil over medium heat. Add the onion and garlic; sauté until translucent and fragrant, about 3-4 minutes.

    Add the chicken to the pot and brown on all sides, about 5-6 minutes.

    Pour in the chicken broth and add the bay leaf. Bring to a gentle simmer.

    Simmer until the chicken is cooked through, 20-25 minutes. Remove the chicken to a plate.

    Shred the cooked chicken into bite-sized pieces and return to the pot.

    Add the carrots and celery. Simmer until the vegetables are tender, about 10 minutes.

    Stir in the peas and continue to simmer for 3-5 minutes.

    Make the dumpling batter: In a bowl, whisk together flour, baking powder, and salt.

    In a separate bowl, whisk milk, melted butter, and egg until combined; pour into the dry ingredients and mix until just combined.

    Drop spoonfuls of dumpling batter onto the simmering stew. Cover and cook for 15 minutes, until dumplings are cooked through and fluffy.

    Discard the bay leaf. Taste and season with additional salt and pepper if needed. Stir in chopped parsley just before serving.
