    Prepare patty mixture

    In a large bowl, combine ground beef, breadcrumbs, milk, egg, finely chopped onion, minced garlic, parsley, Worcestershire sauce, salt, and pepper. Mix gently with hands or a fork until just combined; avoid overworking the meat to keep patties tender.

    Shape patties

    Divide the mixture into 4 equal portions. Gently shape into patties about 3/4 inch thick. Create a shallow indent in the center of each patty to prevent doming during cooking.

    Chill patties (optional)

    Refrigerate patties for 15 minutes to firm up for even cooking and easier handling.

    Sear patties

    Heat vegetable oil in a large skillet over medium-high heat. Add patties and sear for 3-4 minutes on each side until deeply browned. Remove patties from skillet and tent with foil to keep warm.

    Make onion gravy

    In the same skillet, melt butter over medium heat. Add the finely chopped onion and cook until translucent, about 4-5 minutes. Stir in flour and cook for 1 minute to form a roux. Gradually whisk in beef broth until smooth and slightly thickened, about 3-5 minutes. Season with additional salt and pepper if needed.

    Finish cooking in gravy

    Return the patties to the skillet, nestling them into the gravy. Simmer for 2-3 minutes to reheat and let flavors meld.

    Spoon onion gravy over the burgers and serve hot with mashed potatoes, rice, or steamed vegetables.
