    In a small bowl, soak breadcrumbs in milk until evenly moistened, about 2 minutes.

    In a large bowl, combine ground beef, chopped onion, egg, garlic powder, salt, pepper, and Worcestershire sauce (and optional soy sauce). Add the moistened breadcrumbs and mix gently with your hands or a fork until just combined; do not overwork the meat.

    Form the mixture into a single patty about 1/2 inch thick (this is the half burger steak). If you prefer a smaller patty, adjust thickness accordingly.

    Heat vegetable oil in a skillet over medium-high heat. Sear the patty for 4-5 minutes on the first side until a deep crust forms, then flip and cook 4-5 minutes on the other side. Remove patty to a plate and keep warm.

    In the same skillet, add chopped onion and sauté until translucent, about 3-4 minutes. Sprinkle flour over onions and cook for 1 minute to form a light roux. Slowly whisk in beef stock and, if using, soy sauce; bring to a simmer and cook until slightly thickened, about 2-3 minutes.

    Return the burger steak to the skillet, nestling it in the gravy. Simmer 5-8 minutes until the patty is cooked through and the flavors meld. Adjust salt and pepper to taste.
