    Preheat and prep smoker/grill

    If using a charcoal or gas grill, set up for indirect medium-high heat (approx. 400°F / 200°C). If using a dedicated smoker, preheat to 375–400°F (190–205°C). Drain soaked mesquite chips and place in a smoker box or on hot coals so they produce a steady, hot smoke.

    Prepare bones

    Pat marrow bones dry inside and out with paper towels. Lightly brush exterior cut faces with 1 tablespoon olive oil, then season the cut surface evenly with 2 teaspoons kosher salt and 1 teaspoon freshly ground black pepper. Let rest at room temperature for 15 minutes while the grill/smoker comes up to temp.

    Roast marrow

    Arrange bones upright on a rimmed baking sheet or in a roasting pan so the marrow is slightly visible but won’t spill (bone side down or cut side up, depending on shape). Place pan on the grill/smoker over indirect heat. Roast with mesquite smoke for 12–18 minutes: you want the marrow to be soft and just beginning to separate from the bone but not melted away. Internal target: marrow should jiggle when nudged, temperature ~140–145°F (60–63°C). Rotate the pan once halfway for even smoke exposure.

    Finish

    If you prefer a slightly more caramelized top, move the bones briefly to direct heat for 30–60 seconds face-up at the end, watching carefully to avoid flare-ups. Remove bones from heat and let rest 2–3 minutes; marrow will continue to relax but remain scoopable.

    Crostini

    While marrow roasts, slice the baguette into 1/2" slices. Brush both sides lightly with extra-virgin olive oil and toast on the grill over direct heat or in a 400°F (200°C) oven until golden and crisp, about 2–3 minutes per side. Keep warm.

    Parsley-caper relish (to balance richness)

    In a medium bowl combine 1 cup finely chopped flat-leaf parsley, 1 minced shallot, 2 tablespoons chopped capers, the zest of 1 lemon, 1 tablespoon lemon juice, 1 teaspoon red wine vinegar, and 2 tablespoons extra-virgin olive oil. Season with 1/2 teaspoon finishing salt and 1/4 teaspoon freshly ground pepper. Taste and adjust acidity or salt — the relish should be bright and slightly tangy to cut the marrow's richness.

    To serve, spoon a small amount of the parsley-caper relish onto each toasted bread slice. Using a small spoon, scoop warm marrow from the bones onto the dressed toasts. Sprinkle a tiny pinch of fleur de sel or finishing salt over each portion and top with microgreens or pickles if using.

    Arrange roasted bones on a warmed platter or individual plates. Place crostini with marrow beside the bones and pass any remaining parsley-caper relish. Provide small spoons or marrow scoops and napkins. Serve immediately while marrow is warm and spreadable.
