Prickly Pear Purée

    Prepare and purée

    Rinse prickly pears, trim ends, and peel using a knife to remove the thick skin. In a blender, combine peeled prickly pear flesh and 1/4 cup granulated sugar. Blend until completely smooth, about 30–45 seconds.

    Strain

    Pass the purée through a fine-mesh sieve into a bowl, pressing with the back of a spoon to extract as much liquid as possible. Discard seeds and solids. Stir in 1 tablespoon fresh lemon juice to brighten flavor. Measure out 1 to 1 1/4 cups strained purée for folding into the ice cream later; chill in the refrigerator while you make the base.

    Toast the milk

    Preheat a medium saucepan over medium heat. Pour in 2 cups whole milk and bring to a bare simmer, watching carefully to avoid scalding. Once steaming and tiny bubbles form at the edges (not boiling), remove from heat and let sit 3 minutes to 'toast' the milk flavor.

    Melt chocolate

    Chop 4 oz milk chocolate into small pieces. Add chocolate to a heatproof bowl. Pour 1/2 cup of the hot milk over the chocolate and let sit 1 minute, then whisk until smooth and glossy to create a chocolate slurry.

    Make custard (tempering)

    In a medium bowl, whisk together 4 egg yolks and 1/2 cup granulated sugar until pale and slightly thickened. Slowly temper the yolks by pouring 1/3 of the remaining hot milk mixture into the yolks in a thin stream while whisking constantly. Continue adding milk in two more additions until yolks are warmed.

    Cook custard

    Return the tempered yolk-milk mixture to the saucepan and cook over medium-low heat, stirring constantly with a heatproof spatula and scraping the bottom, until the custard coats the back of the spatula and reaches 175–180°F (use an instant-read thermometer) or forms a slight nap. Do not boil.

    Finish base with chocolate

    Remove custard from heat and immediately whisk the chocolate slurry into the hot custard until fully combined and smooth. Add 1 tsp vanilla extract, 1/4 tsp kosher salt, and optional 1 tsp neutral oil if using (this helps with the 'washed' silky texture). Stir in 1 tablespoon light corn syrup if using for sheen and scoopability.

    Strain and cool

    Strain the warm custard through a fine-mesh sieve into a clean bowl to remove any cooked bits. Place the bowl in an ice bath and stir occasionally until the custard cools to room temperature, then cover with plastic wrap pressed directly on the surface to prevent a skin. Chill in the refrigerator at least 4 hours or overnight.

Assembly and Churn (Washed Technique)

    Create washed chocolate base

    Because this is a 'washed' style, you'll combine part of the prickly pear purée with the chilled chocolate custard to impart color and a light fruit note while maintaining the toasted milk chocolate as the dominant flavor. Remove chilled custard from refrigerator. Stir 1/3 to 1/2 cup of the strained prickly pear purée into the custard to taste — start with 1/3 cup for a subtle wash, up to 1/2 cup for a brighter pink tint. Taste and adjust: the chocolate should remain prominent, with a gentle prickly pear lift.

    Churn

    Pour the combined base into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency, about 20–30 minutes depending on machine.

    Fold in remaining purée (ripple)

    When churned, transfer half of the ice cream to a freezer-safe container. Spoon 3/4 to 1/2 cup of the remaining prickly pear purée in ribbons over that layer. Top with the remaining ice cream and use a spatula to gently ripple the purée — avoid fully mixing; you want visible swirls of bright pink. If you used less purée earlier, you can add more here to taste (reserve about 1/4 cup for topping if desired).

    Harden

    Smooth the surface, press a piece of parchment or plastic directly onto the ice cream to reduce ice crystals, and freeze for at least 4 hours to harden.

Service

    Remove ice cream from freezer 5–10 minutes before scooping to soften slightly. Serve scoops garnished with a small spoonful of reserved prickly pear purée if desired. The final flavor should be toasted milk chocolate forward, with a delicate, bright prickly pear wash and visible berry-pink swirls.
