    Prepare fish

    Pat the fillets very dry with paper towels on both sides and along the skin. Dry fish helps achieve a good sear and prevents sticking.

    Season both sides and the skin lightly and evenly with the kosher salt, then sprinkle the flesh side with freshly ground black pepper and smoked paprika (if using). Let the seasoned fillets rest at room temperature for 10–15 minutes while you heat the plancha or pan.

    Heat a large cast-iron griddle, heavy skillet, or plancha over medium-high to high heat until very hot and just beginning to smoke (about 3–5 minutes). If using a stovetop cast-iron pan, preheat for 5 minutes; you want an even, intense heat so the fish sears immediately.

    Add 2 tablespoons of the neutral oil to the hot surface and spread with a heatproof spatula or tongs to coat. Carefully place the fillets skin-side down, spaced so they do not touch. Press gently with a spatula for 10–15 seconds to keep the skin flat against the pan and promote even contact.

    Sear skin-side down without moving for 3–5 minutes, depending on thickness, until the skin is deeply golden-brown and crispy and opaque flesh has risen about two-thirds of the way up the fillet. If the fillets are thinner (3/4 inch), start checking at 3 minutes; thicker fillets (1–1.5 inch) may need up to 5 minutes.

    Flip the fillets carefully and add the remaining 1 tablespoon oil to the pan around the fish (not directly on top). Cook on the flesh side for 1–2 minutes more to finish—fish should register 125–130°F (51–54°C) for medium-rare to medium, or 140°F (60°C) if you prefer fully opaque and flaky. Total cook time will be roughly 5–7 minutes depending on thickness.

Aromatic Butter Sauce (à la Plancha Finish)

    Make pan sauce

    While the fish cooks on the flesh side (or immediately after removing fish), reduce heat to medium and add the minced shallot to the hot pan where fond (browned bits) remains. Sauté 30–45 seconds until fragrant. Add the minced garlic and sauté 15–20 seconds—don’t let it burn.

    Deglaze the pan with the 2 tablespoons white wine (or fish stock), scraping up browned bits with a wooden spoon. Let the liquid reduce by about half, 30–60 seconds.

    Reduce heat to low and add the butter in 1–2 tablespoons at a time, swirling or stirring constantly to emulsify into a glossy sauce. When butter is melted and combined, stir in the lemon juice, lemon zest, capers, chopped parsley, and red pepper flakes (if using). Taste and season with a pinch of additional salt and pepper if needed.

    Spoon the warm butter-caper sauce over the cooked fillets on the pan for 15–30 seconds to finish and to moisten them. If you removed fish earlier, return them to the pan briefly (15–30 seconds) to warm through in the sauce, or transfer sauce to a small warm dish and spoon over plated fish.

    Transfer each fillet to warmed plates, skin-side up to preserve crispness. Spoon additional aromatic butter sauce over the flesh, garnish with microgreens or extra parsley, and serve with a lemon wedge alongside.
