Cookie Crumble

Method

    Place vanilla cookies in a food processor and pulse until they become fine crumbs (alternatively, place in a zip-top bag and crush with a rolling pin).

    Transfer crumbs to a bowl and stir in the melted butter and 1 teaspoon granulated sugar until evenly moistened and clumping slightly when pressed.

    Divide the crumb mixture among 6 serving glasses or ramekins (about 2–3 tablespoons each) and press gently to form a base. Chill in the refrigerator while preparing other components.

Blueberry Jam Layer

    Cook jam

    Combine the blueberries, 2 tablespoons granulated sugar, and 1 teaspoon lemon juice in a small saucepan over medium heat.

    Bring to a gentle simmer, stirring occasionally. As the berries release juice and begin to break down (about 5–7 minutes), dissolve 1 teaspoon cornstarch in 1 teaspoon water and stir into the blueberry mixture.

    Continue cooking 1–2 minutes until the mixture thickens slightly. Remove from heat and let cool to room temperature (it will thicken more as it cools). If you prefer a smoother jam, mash with a fork or briefly pulse with an immersion blender; for a chunky layer leave whole.

    When cooled, spoon approximately 1 tablespoon of blueberry jam over each chilled cookie base.

Limoncello Mousse

    Prepare base

    In a medium bowl, beat the room-temperature cream cheese with 1 1/4 tablespoons powdered sugar, lemon zest, lemon juice, limoncello, and vanilla extract until smooth and lump-free. Use an electric hand mixer for best results (about 1–2 minutes).

    In a separate chilled bowl, whip the cold heavy cream to soft peaks (start slow then increase speed).

    Fold one-quarter of the whipped cream into the cream cheese mixture to lighten it, then gently fold in the remaining whipped cream until fully incorporated and airy. Taste and adjust: if you want a stronger limoncello flavor add up to 1 additional teaspoon; if too boozy let it rest in fridge 10–15 minutes.

    Spoon or pipe the limoncello mousse over the blueberry layer, filling each serving glass to just below the rim (about 3–4 tablespoons mousse per glass). Smooth the top with a spoon or offset spatula.

    Chill the assembled desserts in the refrigerator for at least 1 hour to set and allow flavors to meld (preferably 2 hours).

Finishing & Garnish

    Before serving, top each mousse with a small dollop of whipped cream (use remaining 1/2 cup or reserved whipped cream).

    Add 5–6 fresh blueberries to each serving and sprinkle a pinch (about 1/16 teaspoon) of extra lemon zest over the top for bright aroma.

    Serve chilled. Store leftovers covered in the refrigerator up to 2 days; cookies will soften over time.
