Combine spices and water
In a small saucepan, add 2 cups water, sliced ginger, crushed cardamom pods, cloves, peppercorns, cinnamon stick, and star anise (if using). Bring to a gentle simmer over medium heat.

Simmer to infuse
Reduce heat to low and simmer the spiced water gently for 10 minutes to extract aroma and flavor from the whole spices and ginger. Keep the pan partially covered to limit evaporation.

Sweeten and steep
Stir in 2 tablespoons brown sugar (or your chosen sweetener). Let the mixture steep on the lowest heat for 3–5 minutes, tasting after 3 minutes to reach desired tea strength and sweetness.

Strain
Remove from heat and strain the chai concentrate through a fine-mesh sieve or cheesecloth into a heatproof container to remove tea leaves and spices. Press gently on solids to extract liquid but avoid forcing bitter tannins.

Cool and store (optional)
Allow concentrate to cool slightly. Use immediately or refrigerate in a sealed container for up to 4–5 days. Reheat gently before serving.
