Brisket Burger Patties

    Chill meat

    If ground brisket was freshly ground, refrigerate meat for 20–30 minutes until slightly firm — this makes forming patties easier and helps them hold shape.

    In a large bowl combine the ground brisket and ground chuck (if using). Sprinkle kosher salt, black pepper, garlic powder, and onion powder over the meat. Add Worcestershire sauce.

    Gently mix with your hands or a fork just until seasonings are evenly distributed. Do not overwork the meat — handle as little as possible to keep burgers tender.

    Divide the mixture into 4 equal portions (~5 oz each). Form loose patties about 3⁄4 inch thick and slightly wider than your buns. Make a shallow dimple in the center of each patty with your thumb to prevent doming while cooking.

    Preheat a heavy skillet, cast-iron griddle, or flat-top over medium-high heat until very hot. Add 1 tablespoon neutral oil and spread to coat the surface.

    Place patties onto the hot surface. Cook undisturbed for 3–4 minutes until a brown crust forms on the bottom.

    Flip patties and immediately place a slice of cheddar on each patty. Cook another 3–4 minutes for medium (adjust time +/- for desired doneness). If desired, cover the pan for the last minute to help the cheese melt.

    If using the optional extra Worcestershire, brush about 1/8 teaspoon on each cooked patty right after flipping or when finished for an extra savory hit.

    Transfer patties to a warm plate and let rest 3 minutes while finishing buns and sauce.

    Warm over low heat, stirring, until the sugar dissolves and flavors meld, about 3–5 minutes. Taste and adjust: add a pinch of salt or more vinegar for brightness if needed. Keep warm or transfer to a small bowl for assembly.

Buns & Toppings

    Split brioche buns and spread softened butter on cut sides.

    Toast the buttered sides in a clean skillet or on the griddle over medium heat until golden and crisp, about 1–2 minutes. Remove and keep warm.

    If using pickled red onions and sliced pickles, have them ready in small bowls. Wash and pat dry lettuce leaves and slice tomato into 4 even slices.

Assembly

    Spread 1 tablespoon of the brisket-style BBQ sauce on the bottom half of each toasted bun.

    Place one lettuce leaf on the sauce, then add a burger patty topped with melted cheddar.
