Method
Pâté
Prepare livers
Rinse chicken livers under cold water and pat dry with paper towels. Trim away any connective tissue or greenish bits and cut larger lobes in half so pieces are uniform.
Cook livers
Increase heat to medium-high and add the trimmed livers in a single layer. Sear without moving for 1–2 minutes until edges brown, then stir and cook another 2 minutes until exterior is browned but centers remain slightly pink (internal temp ~140–145°F / 60–63°C). Add the bay leaf and thyme in the last minute.
Blend
Remove and discard bay leaf. Transfer cooked livers and shallot/garlic mixture to a food processor or blender. Add remaining 4 tablespoons butter (cold or slightly softened), heavy cream, salt, pepper, and lemon juice if using. Puree until completely smooth, stopping to scrape sides. Taste and adjust seasoning.
Finish and chill
Press the pâté into a small loaf pan or ramekin(s). Smooth the top and dot with a tablespoon of softened butter. Cover with plastic wrap and chill at least 2 hours until firm (overnight for best flavor).
Toasted bread
Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet. Brush one side lightly with olive oil and season with a pinch of sea salt. Toast in oven 6–8 minutes until golden and crisp, flipping once halfway. Remove and brush warm slices with the room-temperature butter for extra flavor. Keep warm or at room temperature for serving.
Fresh spinach & dressing options
White balsamic dressing
Whisk together 2 tablespoons extra-virgin olive oil, 2 tablespoons white balsamic vinegar, Dijon mustard, honey, and 1/4 teaspoon salt. Toss with the baby spinach just before serving to lightly coat. Taste and adjust salt or acidity as desired.
Quick lemon pesto (alternative)
In a small blender or with a mortar and pestle, combine basil leaves, toasted nuts, grated Parmesan, 1 garlic clove, zest and juice of half the lemon, 4 tablespoons olive oil, and 1/2 teaspoon salt. Pulse/blend to a loose paste — add a little more oil if needed. Toss 1–2 tablespoons of the pesto with the spinach or serve a spoonful on the plate beside the pâté as a bright counterpart.
Garnish & plating
To serve, spoon chilled pâté from the ramekin onto a serving dish or serve whole in the ramekin. Scatter toasted nuts on top if using, and sprinkle chopped parsley or chives and flaky sea salt. Arrange toasted bread alongside and a small bowl or pile of dressed spinach. Offer both dressing options (small ramekin of white balsamic vinaigrette and a dollop of lemon pesto) so guests can choose.
