For the Strawberry Shortcake

Method

Instructions

  1. 1

    Prepare the Strawberries

Wash and slice the fresh strawberries. Sprinkle with powdered sugar and set aside to macerate for about 30 minutes.

  2. 2

    Make the Shortcake

Preheat the oven to 400°F (200°C). In a bowl, mix flour, sugar, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in heavy cream until just combined. Do not overmix.

  3. 3

    Bake the Shortcakes

Turn the dough onto a floured surface and pat into a 1-inch thick round. Cut out shortcakes using a biscuit cutter. Place on a baking sheet and bake for 15-20 minutes until golden brown.

  4. 4

    Prepare the Whipped Cream

In a bowl, whip heavy cream with vanilla extract until soft peaks form. Sweeten to taste with powdered sugar.

  5. 5

    Assemble the Shortcake

Once the shortcakes have cooled slightly, slice them in half. Layer strawberries and whipped cream between the halves and on top. Serve immediately.
