    Prepare the beef cheeks

    Season the beef cheeks with salt and black pepper on all sides.

    Sear the beef

    In a large Dutch oven, heat olive oil over medium-high heat. Add the seasoned beef cheeks and sear them until browned on all sides, about 5-7 minutes. Remove from the pot and set aside.

    Sauté vegetables

    In the same pot, add onion, carrot, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.

    Add liquids and herbs

    Pour in the red wine and scrape up any browned bits from the bottom of the pot. Add the beef broth, bay leaves, and thyme. Bring to a simmer.

    Braise the beef

    Return the beef cheeks to the pot, ensuring they are submerged in the liquid. Cover and reduce heat to low. Simmer for 3-4 hours, or until the meat is tender.

    Prepare the grits

    While the beef is braising, cook the grits according to package instructions. Stir in butter and cheese if using.

    Once the beef is tender, remove it from the pot and let it rest for a few minutes. Strain the braising liquid if desired and reduce it to make a jus.
