Preparation and Cooking

    Cook Potatoes

    Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly.

    Mash and Combine

    In a large bowl, mash the cooked potatoes until smooth. Add the flaked smoked trout, chopped green onions, beaten eggs, salt, and black pepper. Mix until well combined.

    Form Croquettes

    Shape the mixture into small oval or round patties. Coat each patty in flour, then dip into the remaining beaten eggs, and finally coat with bread crumbs.

    Fry Croquettes

    In a large skillet, heat vegetable oil over medium heat. Fry the croquettes in batches until golden brown and crispy on all sides, about 3-4 minutes per side. Drain on paper towels.

    Serve

    Serve the smoked trout and potato croquettes hot, garnished with microgreens and accompanied by chimichurri sauce.
