Gnocchi Preparation

    Prepare the Potatoes

    Boil the potatoes in salted water until tender. Drain and let cool slightly, then peel and mash until smooth.

    Make the Dough

    In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a soft dough forms. If too sticky, add a little more flour.

    Shape the Gnocchi

    Divide the dough into sections and roll each section into a long rope about 1/2 inch thick. Cut into 1-inch pieces and shape each piece with a fork.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Drop in the gnocchi and cook until they float to the top, about 2-3 minutes. Remove with a slotted spoon.

    Prepare the Topping

    In a skillet, caramelize sliced onions in olive oil until golden brown. Add pepper to taste.

    Serve

    Toss the cooked gnocchi with the caramelized onions, crumbled Three Graces chevre, and fresh arugula. Serve warm.
