    Make the Caramel

    In a saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar dissolves. Allow it to boil without stirring until it turns a golden brown color. Quickly pour the caramel into the bottom of a flan mold or individual ramekins, tilting to coat the bottom evenly. Set aside to cool.

    Prepare the Flan Mixture

    In a blender, combine the sweetened condensed milk, evaporated milk, eggs, grated ginger, chopped mint, and vanilla extract. Blend until smooth and well combined.

    Combine and Bake

    Pour the flan mixture over the cooled caramel in the mold. Place the flan mold in a larger baking dish and fill the outer dish with hot water (about halfway up the sides of the flan mold). Bake at 350°F (175°C) for about 50-60 minutes or until the flan is set and a toothpick comes out clean.

    Cool and Serve

    Remove the flan from the oven and allow it to cool to room temperature. Refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges of the flan and invert onto a serving plate. Enjoy your ginger-mint flan!
