Prepare the Chicken Tenders

Cut and Marinate
Cut the chicken breasts into strips. In a bowl, whisk together the eggs and milk. In another bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika. Dip chicken strips into the egg mixture, then dredge in the flour mixture. Let sit for about 15 minutes.

Fry the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, fry the chicken tenders in batches until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels.
Prepare the Fries or Salad

For Fries
Preheat the oven to 425°F (220°C). Cut the potatoes into fries and toss them with olive oil and salt. Spread on a baking sheet in a single layer. Bake for 25-30 minutes, turning halfway through, until crispy.

In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber. Toss with salad dressing of your choice.
