    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.

    Cook the Mushrooms

    Add the sliced mushrooms to the pot and cook for an additional 5-7 minutes until they are soft.

    Add Tomatoes and Seasoning

    Stir in the canned diced tomatoes (with juice), vegetable broth, dried oregano, dried basil, salt, and black pepper. Bring to a simmer.

    Simmer the Soup

    Reduce heat to low and let the soup simmer for about 15-20 minutes, allowing the flavors to meld together.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If you prefer a chunky texture, blend only half of the soup.

    Serve

    Ladle the bisque into bowls and garnish with grated Parmesan cheese and chopped fresh parsley before serving.
