    Prepare the Bacon Jam

    In a skillet over medium heat, cook the bacon until crispy. Remove the bacon and drain on paper towels, leaving the bacon fat in the skillet.

    Add chopped onions to the skillet with the bacon fat and sauté until translucent, about 5 minutes.

    Chop the cooked bacon and return it to the skillet. Stir in brown sugar, balsamic vinegar, and a pinch of salt. Cook for another 5-7 minutes, stirring occasionally, until the mixture thickens. Remove from heat and let cool.

    Prepare the Burger Patties

    In a bowl, combine ground beef with salt and pepper. Form into 4 equal patties.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the burger patties for about 4-5 minutes on each side for medium doneness.

    Add Cheese

    In the last minute of cooking, place a slice of smoked cheddar cheese on each patty and cover until melted.

    Assemble the Burgers

    Place the cooked patties on the burger buns. Top generously with the bacon jam. Serve immediately.
