Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Rinse the Brussels sprouts, trim the ends, and cut them in half.

Toss and Roast
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer. Roast in the oven for about 20-25 minutes or until crispy and golden brown.

Make the Sauce
In a saucepan, combine the maple syrup and bourbon. Bring to a simmer over medium heat, stirring occasionally, until slightly thickened (about 5-7 minutes).

Combine and Serve
Once the Brussels sprouts are done roasting, toss them with the maple bourbon sauce. Top with crumbled bacon, blue cheese, and a drizzle of balsamic glaze before serving.
