Preparation

  1. 1

    Prepare the Filling

In a large pot over medium heat, melt the butter. Add the chopped onion and minced garlic, sauté until the onion is translucent.

  2. 2

    Cook Vegetables

Add the diced carrots, peas, and potatoes to the pot. Sauté for about 5 minutes until they start to soften.

  3. 3

    Make the Sauce

Sprinkle the flour over the vegetables and stir to coat. Gradually add the chicken broth and heavy cream, stirring constantly until the mixture thickens.

  4. 4

    Combine Ingredients

Add the shredded chicken, salt, pepper, thyme, and bay leaf. Stir to combine and let simmer for about 10 minutes.

  5. 5

    Prepare the Pie Crust

Preheat the oven to 425°F (220°C). Roll out the pie crust and place it in a pie dish. Pour the chicken filling into the crust.

  6. 6

    Bake

Cover with another layer of pie crust, sealing the edges. Cut slits in the top crust to allow steam to escape. Bake for 30-35 minutes or until the crust is golden brown.

  7. 7

    Cool and Serve

Let the pie cool for 10 minutes before serving.
