Preparation

1. Chop the Vegetables

Chop the cauliflower, potatoes, onion, and garlic into small pieces for even cooking. Set aside.

2. Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.

3. Cook the Vegetables

Add the chopped cauliflower and potatoes to the pot. Stir well and cook for an additional 5 minutes.

4. Add Broth and Seasoning

Pour in the vegetable broth and add thyme, salt, and black pepper. Bring to a boil, then reduce the heat and let simmer for about 20 minutes, or until the vegetables are tender.

5. Blend the Soup

Using an immersion blender, puree the soup until smooth. Alternatively, transfer in batches to a blender and blend until smooth.

6. Add Cream and Cheese

Return the soup to the pot (if using a blender) and stir in the heavy cream and Parmesan cheese. Heat gently until warmed through.

Serving

7. Garnish and Serve

Ladle the soup into bowls and garnish with chopped chives. Drizzle with a little more olive oil if desired. Serve hot.
