1. Prep the Potatoes
Peel and shred the potatoes using a box grater or food processor. Place them in a large bowl and rinse under cold water to remove excess starch. Drain well and pat dry with a clean kitchen towel.
2. Prepare the Scallions
Wash the scallions thoroughly and chop them into small pieces, both the white and green parts.

In a large mixing bowl, combine the shredded potatoes, shredded white cheddar cheese, chopped scallions, salt, black pepper, garlic powder, and olive oil. Mix well until all ingredients are evenly distributed.
4. Cook the Potatoes
Heat a large skillet over medium heat. Once hot, add the potato mixture, spreading it evenly across the skillet. Cook for about 5-7 minutes until the bottom is golden brown.
5. Flip and Finish Cooking
Using a large spatula, carefully flip the potato mixture. Cook for an additional 5-7 minutes on the other side, until it is golden brown and cooked through.
Serving
6. Serve Hot
Once cooked, remove from heat and let it cool for a couple of minutes. Serve hot, garnished with additional chopped scallions if desired.
