Preparation

    Chop Vegetables

    Dice the bell pepper and red onion into small pieces. Slice the zucchini and chop the mushrooms. Rinse the spinach and set aside.

    Mix Eggs

    In a large bowl, crack the 6 eggs and add 1 tablespoon of milk. Whisk together until well combined.

    Prepare Cheese

    Crumble the feta cheese into small pieces and set aside for later.

    Sauté Vegetables

    Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat. Add the diced bell pepper, red onion, zucchini, and mushrooms. Sauté for about 5-7 minutes until they are soft.

    Add Spinach

    Add the spinach to the skillet and cook for an additional 2-3 minutes until wilted.

    Combine with Eggs

    Pour the whisked eggs over the sautéed vegetables in the skillet. Gently stir to combine.

    Season

    Sprinkle salt, black pepper, and paprika over the mixture and stir to incorporate.

    Cook Tortilla

    Cook the tortilla on medium-low heat for about 5-7 minutes. Once the edges start to set, use a spatula to gently lift the edges and let any uncooked egg flow underneath.

    Finish Cooking

    After about 10-12 minutes or when the top is just set, sprinkle the crumbled feta cheese on top. If desired, cover with a lid for another minute to melt the cheese.

    Serve

    Once fully cooked, carefully slide the tortilla onto a serving plate. Cut into wedges and serve warm.
