Preparation

    Prepare the Potatoes

    Wash and dice the potatoes into small cubes. Place them in a pot and cover with water. Bring to a boil and cook for about 10-12 minutes until tender. Drain and set aside.

    Cook the Bacon or Sausage

    In a skillet over medium heat, add the Applewood smoked bacon slices or house maple sausage links. Cook until crispy (for bacon) or browned and cooked through (for sausage), about 4-6 minutes on each side. Remove from skillet and set aside.

    Cook the Potatoes

    In the same skillet, add olive oil or butter. Once hot, add the drained potatoes. Season with salt and black pepper. Sauté for about 5-7 minutes until they are golden brown and crispy.

    Cook the Eggs

    In a separate frying pan, crack the eggs and cook them to your liking (sunny-side up, scrambled, or over-easy) for about 3-5 minutes. Season with salt and pepper.

Serving

    Plate the Breakfast

    On a plate, serve the cooked eggs alongside the sautéed potatoes. Arrange the crispy bacon or sausage on the side. Add a cup of fresh fruit to complete the meal.
