Prepare the Short Ribs
Preheat your oven to 300°F (150°C). Season the short ribs with salt and black pepper. In a large oven-safe pot, sear the short ribs on all sides until browned. Cover and cook in the preheated oven for 3 hours, or until tender. Shred the meat and set aside.

Assemble the Grilled Cheese
Spread butter on one side of each slice of sourdough bread. On the unbuttered side, layer shredded short ribs, aged cheddar, American cheese, and Fontina cheese. Top with another slice of bread, buttered side up.

Add Tomatoes and Broth
Stir in the canned crushed tomatoes and vegetable broth. Bring to a simmer and cook for about 15-20 minutes.

Blend and Finish the Bisque
Using an immersion blender, blend the soup until smooth. Stir in heavy cream, salt, black pepper, and fresh basil. Heat for an additional 5 minutes before serving.

Prepare the Fries
Cook the frozen French fries according to the package instructions until crispy. Once cooked, remove from the oven and sprinkle with seasoned salt.
