Ice Cream Base

Preparation of Ice Cream Base

    Mix Dairy Ingredients

    In a large mixing bowl, combine the heavy cream and whole milk. Whisk together until well combined.

    Add Sugar and Salt

    Add the granulated sugar and salt to the cream mixture. Continue whisking until the sugar is fully dissolved.

    Incorporate Vanilla Bean Paste

    Stir in the vanilla bean paste, ensuring it is evenly distributed throughout the mixture.

    Prepare Egg Yolks

    In a separate bowl, whisk the egg yolks until they become pale and slightly thickened.

    Temper the Egg Yolks

    Slowly add about 1 cup of the warm cream mixture to the egg yolks, whisking constantly to temper them. This prevents the yolks from scrambling.

    Combine Mixtures

    Once tempered, pour the egg yolk mixture back into the rest of the cream mixture, stirring to combine.

Cooking the Ice Cream Base
