    Prepare the Chicken

    Season the chicken breasts with salt, black pepper, and olive oil. Allow to marinate for at least 15 minutes.

    Chop the Vegetables and Fruits

    Dice the apple, avocado, and tomato. Chop the cilantro finely. If using fresh corn, cut the kernels off the cob.

    Prepare the Goat Cheese

    Crumble the goat cheese into small pieces and set aside.

    Prepare the Almonds

    Roughly chop the toasted Marcona almonds and set aside.

Cooking

    Cook the Chicken

    Heat a skillet over medium heat and add the marinated chicken breasts. Cook for about 6-8 minutes on each side or until fully cooked through and golden brown. Remove from heat and let rest for a few minutes.

    Combine Ingredients

    In a large bowl, combine the diced apple, avocado, tomato, corn, dried cherries, and chopped cilantro.

    Assemble the Dish

    Slice the cooked chicken breasts and place them on a serving plate. Top with the mixed salad and sprinkle crumbled goat cheese and chopped Marcona almonds on top.

    Drizzle with Lemon Juice

    Finish with a drizzle of lemon juice for added flavor.
