Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) to ensure it's hot enough for roasting the potatoes.

  2. 2

    Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into even-sized cubes, approximately 1-inch in size, to ensure even cooking.

  3. 3

    Season the Potatoes

In a large mixing bowl, combine the cubed potatoes with olive oil, salt, black pepper, garlic powder, and dried rosemary. Toss until the potatoes are evenly coated with the oil and seasonings.

Roasting

  1. 4

    Arrange on Baking Sheet

Spread the seasoned potatoes in a single layer on a baking sheet, ensuring they are not overcrowded for optimal crisping.

  2. 5

    Roast the Potatoes

Place the baking sheet in the preheated oven and roast for 25-30 minutes, turning the potatoes halfway through to ensure they cook evenly.

  3. 6

    Add Parmesan

In the last 5 minutes of roasting, sprinkle the grated Parmesan cheese over the potatoes and return to the oven until the cheese is melted and slightly golden.

Serving

  1. 7

    Serve Hot

Remove the potatoes from the oven and let them cool for a couple of minutes before serving. Enjoy your Mary's Potatoes as a delicious side dish!
