Method

Cooking the Pasta

    Boil the Macaroni

    In a large pot, bring water to a boil. Add a pinch of salt and the elbow macaroni. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain the Pasta

    Once cooked, drain the macaroni in a colander and set aside.

Making the Cheese Sauce

    Prepare the Roux

    In the same pot, melt the butter over medium heat. Once melted, whisk in the all-purpose flour, stirring continuously for about 1-2 minutes until it forms a smooth paste.

    Add the Milk

    Gradually whisk in the milk, ensuring there are no lumps. Continue to cook over medium heat, stirring frequently until the mixture thickens, about 5-7 minutes.

    Melt the Cheeses

    Reduce heat to low, and add the shredded cheddar cheese and cream cheese. Stir until the cheeses are completely melted and the sauce is smooth.

    Season the Sauce

    Add salt, black pepper, garlic powder, and mustard powder. Mix well to combine all the flavors.

Combining and Serving

    Combine Pasta and Sauce

    Add the drained macaroni to the cheese sauce, stirring until the pasta is fully coated with the sauce.

    Prepare the Topping (if using)

    In a small bowl, mix bread crumbs, grated parmesan cheese, and paprika. Sprinkle this mixture over the macaroni and cheese.

    Bake (optional)

    If you prefer a baked version, preheat your oven to 350°F (175°C). Transfer the macaroni and cheese to a greased baking dish and bake for 20-25 minutes until the top is golden brown.

    Serve

    Serve the macaroni and cheese hot, either straight from the pot or from the baking dish if baked.
