Crust Preparation
- 1
Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt. Stir until the mixture resembles wet sand.
- 2
Form the Crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate to form an even crust. Bake in the preheated oven for about 8-10 minutes or until lightly golden. Remove from the oven and let cool.
Filling Preparation
- 3
Mix the Filling
In a large mixing bowl, whisk together the egg yolks and sweetened condensed milk until well combined. Add the fresh-squeezed key lime juice and lime zest, and mix until smooth and creamy.
- 4
Fill the Crust
Pour the filling into the cooled graham cracker crust, smoothing the top with a spatula. Bake in the oven at 350°F (175°C) for 15 minutes. Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours before serving.
Topping Preparation
- 5
Whip the Cream
In a chilled mixing bowl, pour in the heavy whipping cream and add the powdered sugar. Using a hand mixer or stand mixer, whip the cream on medium-high speed until stiff peaks form.
- 6
Serve the Pie
Spread or pipe the whipped cream over the chilled key lime pie. Garnish with additional lime zest. Slice and serve cold.
