Jammy Eggs & Avocado Toast* Recipe

Method

Cooking the Jammy Eggs

    Prepare the Water

    In a medium pot, bring 6 cups of water to a rolling boil. Add 1 tsp of salt to the water.

    Cook the Eggs

    Once the water is boiling, gently add 4 large eggs using a spoon to avoid cracking. Reduce the heat to a soft boil and cook for 6-7 minutes for jammy yolks.

    Cool the Eggs

    After the cooking time, remove the eggs with a slotted spoon and immediately place them in an ice bath (a bowl of ice and water) to stop the cooking process. Let them cool for about 5 minutes.

    Peel the Eggs

    Once cooled, gently tap the eggs on a hard surface and peel under running water for easier removal of the shell.

Preparing the Avocado Toast

    Toast the Bread

    While the eggs are cooling, toast 4 slices of whole grain bread until golden brown.

    Mash the Avocados

    In a bowl, pit and scoop out 2 ripe avocados. Mash them with a fork, then add 1 tbsp of lemon juice, salt to taste, and 1 tbsp of olive oil. Mix until creamy.

    Slice the Red Onion

    Thinly slice the small red onion and set aside.

    Assemble the Toast

    Spread the mashed avocado evenly over each slice of toasted bread. Top with arugula, a few slices of red onion, and drizzle with 2 tbsp of citrus chili crunch.

    Finish with Seasoning

    Sprinkle each toast with 1 tsp of togarashi seasoning for added flavor.

Serving the Jammy Eggs & Avocado Toast

    Serve

    Cut the jammy eggs in half and place them on top of the avocado toast. Serve immediately and enjoy!
