Method

Chocolate Truffles

    Prepare the Ganache

    Finely chop the dark chocolate and place it in a heatproof bowl.

    Heat the Cream

    In a small saucepan, heat the heavy cream until it just begins to simmer.

    Combine and Stir

    Pour the hot cream over the chopped chocolate and let it sit for 5 minutes. Add butter and vanilla extract, then stir until smooth.

    Chill the Mixture

    Cover the ganache with plastic wrap and refrigerate for about 2 hours or until firm.

    Shape the Truffles

    Using a melon baller or small spoon, scoop out portions of the ganache and roll them into balls.

    Coat with Cocoa Powder

    Roll each truffle in cocoa powder until fully coated. Place on a parchment-lined tray.

    Chill Again

    Refrigerate the truffles for an additional 30 minutes before serving.

White Chocolate Truffles
