Custard

Method

Custard Preparation

  1. 1

    Make the Custard

In a large mixing bowl, whisk together the eggs, heavy cream, milk, vanilla extract, brown sugar, and cinnamon until well combined. Set aside.

French Toast Cooking

  1. 2

    Soak the Bread

Dip each slice of thick-cut bread into the custard mixture, ensuring they are fully coated. Allow them to soak for at least 5 minutes.

  2. 3

    Cook the French Toast

In a large skillet or griddle, melt the butter over medium heat. Cook the soaked bread slices in batches for about 3-4 minutes on each side, or until golden brown.

Topping Assembly

  1. 4

    Prepare the Bananas

    Slice the bananas into rounds.

  2. 5

    Assemble the Dish

Place two pieces of French toast on a plate, top with sliced bananas and a generous dollop of whipped cream. Sprinkle dark chocolate over the top.

  3. 6

    Caramelize

Sprinkle granulated sugar over the whipped cream and use a kitchen torch to caramelize the sugar until it forms a crispy crust. If you don't have a torch, you can place the assembled dish under a broiler for a couple of minutes, watching closely to prevent burning.
