Method

Preparation of Shrimp

  1. 1

    Prepare the Shrimp

Start by rinsing the peeled and deveined shrimp under cold water. Pat them dry with paper towels to remove excess moisture. This will help the batter adhere better.

Tempura Batter

  1. 2

    Make the Tempura Batter

In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt until combined. In a separate bowl, whisk the egg yolk with the ice-cold water. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix; it's okay if there are lumps.

Frying the Shrimp

  1. 3

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle immediately.

  2. 4

    Fry the Shrimp

Dip each shrimp into the tempura batter, allowing any excess to drip off. Carefully place the battered shrimp into the hot oil, frying them in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy, turning them occasionally for even cooking.

  3. 5

    Drain the Shrimp

Using a slotted spoon, transfer the fried shrimp to a plate lined with paper towels to drain excess oil. Repeat the process until all shrimp are cooked.

Dipping Sauce

  1. 6

    Prepare the Dipping Sauce

In a small bowl, combine the soy sauce, rice vinegar, mirin, grated ginger, and chopped green onions. Mix well and set aside.

Serving

  1. 7

    Serve the Tempura Shrimp

Arrange the crispy tempura shrimp on a serving platter with the dipping sauce on the side. Enjoy immediately for the best texture!
