Prepare the Romaine Lettuce
Wash the romaine lettuce thoroughly under cold water. Pat dry with a clean towel or use a salad spinner to remove excess water. Chop the romaine into bite-sized pieces and place in a large salad bowl.

Add Parmesan and Croutons
Sprinkle the grated Parmesan cheese evenly over the chopped romaine. Then, add the croutons on top.

Combine Dressing Ingredients
In a medium mixing bowl, combine the mayonnaise, sour cream, 0.25 cups of grated Parmesan cheese, minced garlic, lemon juice, Dijon mustard, olive oil, and pesto.

Using a whisk or an immersion blender, mix the ingredients until smooth and creamy. Season with salt and black pepper to taste.

Pour the creamy Caesar pesto dressing over the romaine, Parmesan, and croutons in the salad bowl.
