Preparation of Sausage and Bacon

Cook the Sausage
In a large skillet over medium heat, add the maple sausage. Cook, breaking it apart with a spatula, until browned and cooked through, about 8-10 minutes. Remove and set aside.

Cooking Gnocchi and Spinach

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes until they float to the surface. Drain and set aside.

Sauté the Spinach
In the same skillet used for the bacon, add the fresh spinach. Cook over medium heat until wilted, about 2-3 minutes.

Fry the Eggs
In a separate non-stick skillet, heat a small amount of oil over medium-low heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

Divide the gnocchi mixture onto plates. Top each serving with a sunny-side-up egg, a generous sprinkle of shaved Parmesan cheese, and chopped chives.
